Ingredients

  • 4 beef plate short ribs
  • 1/4 cup coarse kosher salt
  • 1/4 cup coarse black pepper
  • 1 tablespoon garlic powder
  • 1/2 cup Smith & Son’s Firehouse Hot Five Alarm BBQ Sauce

Directions

Season the ribs and smoke at 225°F until a rich bark forms. Continue cooking until probe tender at 203–205°F. During the final 20 minutes, lightly brush with Five Alarm BBQ Sauce and allow the glaze to set. Rest 30 minutes before serving.

  • 1 tri-tip roast (2½–3 pounds)
  • 3 tablespoons favorite beef seasoning

Directions

Smoke the seasoned tri-tip at 225°F until it reaches 120–125°F. Sear over high heat for 1–2 minutes per side. Brush lightly with Five Alarm BBQ Sauce during the final minute of searing. Rest 15 minutes, then slice thinly across the grain.
